Made with red wine and spices like fennel.

    Visually, it doesn’t look like Italian sausage that I know. Plus, there seems to be more fat than usual in the sausage. Anyway, I removed the casings and fried up the sausage to render the fat and tossed in my tomato sauce base with other meat. The pasta turned out excellent.
