Brewer’s Malt Sourdough Breads

In collaboration with our friends from Palm Tree Abbey, the awesome craft brewers. Our Brewer’s Bread is crafted with a special ingredient – spent grain from the beer-making process. After the brewer generously shared their leftover malt, we incorporated the wet grain directly into our dough,   resulting in a soft, aromatic loaf that’s bursting with character.

Using spent malt in bread offers several nutritional advantages that can enhance the overall quality and health benefits of the final product. Here are the key benefits:

High Protein Content

Spent malt is rich in protein, typically containing around 25% protein. This addition can significantly increase the protein content of the bread, making it a more nutritious option for consumers looking to boost their protein intake.

Increased Dietary Fiber

Spent malt is an excellent source of dietary fiber, with studies indicating that it can contribute up to 40% fiber in the bread. This high fiber content aids in digestion, helps maintain bowel health, and can contribute to a feeling of fullness, which is beneficial for weight management.

Rich in Minerals

Spent malt contains essential minerals such as calcium, magnesium, potassium, and iron. Incorporating spent malt into bread can enhance its mineral profile, providing important nutrients that support various bodily functions, including bone health and muscle function.

Antioxidant Properties

The secondary plant compounds found in spent malt, such as phenols and flavonoids, have antioxidant properties. These compounds can help combat oxidative stress in the body, potentially reducing the risk of chronic diseases and inflammation.

Functional Benefits

The use of spent malt can improve the functional properties of bread. It can enhance moisture retention, improve the texture, and contribute to a longer shelf life due to its natural preservative qualities. This can lead to a better overall eating experience for consumers.

Sustainability

Using spent malt in bread production promotes sustainability by reducing food waste. Instead of discarding the spent grains from the brewing process, they are repurposed into a nutritious food product, contributing to a circular economy.
